My name is Mike Lyons and I’m a guy who loves good, healthy food. I have a preference for local, sustainable, and minimally processed food. I believe in the healing power of food and I believe in the power of your human mind and body. This blog is an exploration of my transformation into a person who uses these interests and my talents for them to share them with others. I am a student at The Natural Epicurean Academy of Culinary Arts in Austin, TX. My goal is to bring healthy food to others and to bring information about healing diets to them, as well.
About 10 years ago, I began to question the rationality of our food system. I became fascinated by organic, minimally processed foods. I also began to see a trend in the media and in my personal interactions that clearly indicated that food was a powerful healer or source of harm, depending on how it was applied. Finally, I have had a series of experiences in my life which have suggested that the Western philosophy of medicine and Western system of healthcare are limited in their ability to effectively treat illness or foster wellness, and often may be in direct conflict with those goals.
To sum up, my food philosophy can be distilled to the following saying:
βWhen diet is wrong medicine is of no use. When diet is correct medicine is of no need.β ~Ayurvedic Proverb
My goal is to bring nourishing food and information to others. This blog chronicles my lifelong journey.

I’ve enjoyed reading your blog and have found it very useful in helping me make my ultimate decision. I’ve been debating on making a career change and attending NE academy in Portland in January 2013. Doing this would mean relocating from central Ohio and moving across the country, not to mention leaving my current job.
